Prepare the Ingredients
Gather all ingredients and prepare them for cooking. Slice the manchego cheese into thick slices, chop the chorizo into bite-sized pieces, and season the lamb chops and chicken breast with salt and black pepper.

Cook the Chorizo
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped chorizo and cook until browned and crispy, about 5-7 minutes. Remove from skillet and set aside.

Cook the Lamb and Chicken
In the same skillet, add another tablespoon of olive oil. Add the lamb chops and chicken breast. Cook the lamb for about 4-5 minutes on each side for medium-rare, and the chicken for about 6-7 minutes per side, or until fully cooked. Remove from heat and let rest for a few minutes before slicing.

Grill the Manchego
Place the sliced manchego cheese on a grill or grill pan over medium heat. Grill each side until melted and slightly charred, about 2-3 minutes per side. Remove from heat.

Prepare the Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Assemble the Tortilla Tres Colores
On each tortilla, spread a layer of pisto, then add a slice of grilled manchego, a few pieces of chorizo, and slices of lamb and chicken. Top with freshly chopped parsley for garnish.
