Prepare the Octopus
Clean and prepare the octopus for cooking.

Cook the Octopus
In a large pot, bring salted water to a boil. Add the octopus and cook for about 30-40 minutes until tender. Remove from heat and let cool.

Make the Adobo Marinade
In a bowl, combine olive oil, minced garlic, paprika, smoked paprika, oregano, cumin, salt, and black pepper. Mix well to create a smooth marinade.

Add Vinegar and Lemon
Stir in the red wine vinegar and lemon juice into the marinade, mixing until well combined.

Marinate the Octopus
Once the octopus is cool, cut it into bite-sized pieces and add it to the bowl with the marinade. Toss to coat all pieces evenly. Cover and refrigerate for at least 2 hours, preferably overnight.

Serve
After marinating, remove the octopus from the refrigerator. Serve cold or at room temperature, garnished with chopped fresh parsley.
