Method

Preparing Potatoes

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Cut the Potatoes

    Wash and peel the potatoes, then cut them into bite-sized cubes.

    Season the Potatoes

    In a large bowl, toss the potato cubes with olive oil, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, tossing halfway through.

Making Spicy Tomato Sauce

    Heat the Oil

    In a saucepan over medium heat, add 2 tablespoons of olive oil.

    Sauté Garlic

    Add the minced garlic to the hot oil and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Stir in crushed red pepper flakes and paprika. Cook for another 30 seconds.

    Add Tomatoes and Seasonings

    Pour in the canned diced tomatoes and add sugar, salt, and black pepper to taste. Reduce heat and let the sauce simmer for about 10-15 minutes, stirring occasionally until it thickens.

Serving

    Once the potatoes are roasted and the sauce is ready, drizzle the spicy tomato sauce over the potatoes. Serve hot as a delicious appetizer or side dish.
