    Prepare the Ingredients

    Dice the chicken thighs and rabbit meat into bite-sized pieces. Clean and devein the prawns, and clean the mussels. Chop the vegetables (onion, bell pepper, tomatoes) and mince the garlic.

    Soak the Saffron

    In a small bowl, soak the saffron threads in a few tablespoons of warm water for about 10 minutes to enhance their flavor.

    Heat the Oil

    In a large paella pan or wide skillet, heat the olive oil over medium-high heat.

    Sear the Meats

    Add the chicken and rabbit pieces to the pan, searing them until browned on all sides, about 5-7 minutes.

    Add the Vegetables

    Stir in the chopped onion, bell pepper, and minced garlic. Cook until the onion becomes translucent, around 3-4 minutes.

    Incorporate the Rice

    Add the Bomba rice to the pan, stirring well to coat the rice with the oil and mix it with the meat and vegetables.

    Add Liquids and Seasonings

    Pour in the chicken broth, along with the soaked saffron (with water) and the smoked paprika. Season with salt and black pepper to taste.

    Cook the Paella

    Bring the mixture to a boil, then reduce the heat to medium-low. Allow it to simmer without stirring for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

    Add the Seafood

    Add the prawns and mussels to the pan in the last 5 minutes of cooking. Cover the pan with a lid or aluminum foil to steam the seafood until cooked through.

    Once the rice is cooked and the seafood is done, remove the pan from heat and let it rest for about 5 minutes before serving.
