Preparation

    Prepare Ingredients

    Gather all ingredients and prepare them as specified. Peel and devein the shrimp, clean the mussels, and slice the calamari. Dice the bell pepper, finely chop the onion, and mince the garlic.

    Infuse Saffron

    In a small bowl, soak the saffron threads in a couple of tablespoons of warm fish stock for about 10 minutes to release their flavor.

Cooking

    Sauté Vegetables

    In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.

    Add Peppers and Spices

    Add the diced red bell pepper, paprika, salt, and black pepper to the pan. Cook for another 3-4 minutes until the bell pepper is tender.

    Add Rice

    Stir in the bomba or Arborio rice, making sure to coat it well with the oil and vegetable mixture. Cook for 2 minutes.

    Add Stock and Saffron

    Pour in the fish stock and the soaked saffron along with its liquid. Stir well and bring to a boil.

    Simmer the Paella

    Reduce the heat to low and let it simmer without stirring for about 10 minutes.

    Add Seafood

    Gently place the shrimp, mussels, and calamari on top of the rice and cover the pan with a lid or aluminum foil. Cook for another 8-10 minutes until the seafood is cooked and the mussels have opened.

    Finish with Peas

    Add the frozen green peas during the last 2 minutes of cooking for a pop of color.

Serving

    Garnish and Serve

    Remove the paella from heat and let it sit for 5 minutes. Garnish with chopped parsley and lemon wedges. Serve hot.
