Method
Preparation of Mousse
- 1
Mix Mascarpone and Sugar
In a large mixing bowl, combine the mascarpone cheese and granulated sugar. Use a hand mixer or a whisk to blend them together until smooth and creamy.
- 2
Add Lemon Ingredients
Add the lemon zest, fresh lemon juice, and limoncello to the mascarpone mixture. Continue to mix until all ingredients are well incorporated.
- 3
Whip Heavy Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip, as you want the cream to remain light and fluffy.
- 4
Fold in Whipped Cream
Gently fold the whipped cream into the mascarpone mixture using a spatula. Start with a small amount of whipped cream to lighten the mascarpone mixture, then gradually fold in the rest until fully combined.
Serving
- 5
Chill the Mousse
Spoon the mousse mixture into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours to allow the mousse to set.
- 6
Prepare Amaretti Topping
While the mousse is chilling, crush the amaretti cookies into small pieces. This will be used as a topping for the mousse.
- 7
Serve
Once the mousse is set, remove from the refrigerator. Top each serving with crushed amaretti cookies just before serving for added crunch and flavor.
