Cook the Linguine
In a large pot, bring salted water to a boil. Add the linguine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a large skillet over medium heat, add the extra virgin olive oil. Once hot, add the chopped pistachios and sauté for 2-3 minutes until lightly toasted.

Combine Ingredients
Add the cooked linguine to the skillet with the pistachios. Pour in the lemon juice and lemon zest. Add the chopped mint and grated pecorino cheese, tossing everything together. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Season with freshly cracked black pepper to taste. Serve hot, garnished with additional pecorino cheese and mint if desired.
