Prepare the Shrimp
Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels. Season with salt and black pepper to taste.

Heat the Olive Oil
In a large skillet, heat the olive oil over medium heat until shimmering but not smoking.

Add the Chili Flakes
Stir in the dried red chili flakes and cook for another 30 seconds to release their flavor.

Cook the Shrimp
Add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on one side until they are pink, then flip them over.

Add the White Wine
Pour in the white wine and cook for an additional 2-3 minutes, or until the shrimp are fully cooked and the wine has reduced slightly.

Finish with Parsley
Remove the skillet from heat and stir in the chopped fresh parsley. Adjust seasoning with additional salt and pepper if needed.

Transfer the Gambas al Ajillo to a serving dish and serve immediately, ideally with crusty bread to soak up the delicious sauce.
