Mole Sauce Preparation

Prepare the Chiles
Remove the stems and seeds from the California chiles. Rinse under cold water.

Toast the Chiles
In a dry skillet over medium heat, toast the chiles for about 2-3 minutes until fragrant, turning frequently to avoid burning.

Blend the Sauce
In a blender, combine the toasted chiles, sautéed onion and garlic, tomatoes, cumin, oregano, chicken broth, salt, and black pepper. Blend until smooth.

Simmer the Sauce
Pour the blended mole sauce back into the skillet and simmer over low heat for 15-20 minutes, stirring occasionally.
Chuleton Preparation

Prepare the Steak
Season the chuleton steaks generously with salt, black pepper, orange zest, and orange juice. Let marinate for at least 30 minutes.

Preheat Grill
Preheat your grill or grill pan to high heat.

Grill the Chuleton
Place the marinated chuleton steaks on the grill and cook for about 5-7 minutes on each side for medium-rare, or to your desired doneness.

Rest the Steak
Remove steaks from the grill and let rest for 5 minutes before serving.

Serve the grilled chuleton with the California chiles mole drizzled on top.
