Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, oil, and vanilla extract until well combined.

    Mix Together

    Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually stir in the boiling water until the batter is smooth.

    Bake the Cakes

    Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Chocolate Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, melt the semi-sweet chocolate in the microwave or over a double boiler until smooth. Let it cool slightly.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks with sugar and vanilla extract until pale and creamy.

    Combine Mixtures

    Gradually mix the melted chocolate into the egg yolk mixture until well combined.

    Whip the Cream

    In another bowl, whip the heavy cream until stiff peaks form.

    Fold in the Cream

    Gently fold the whipped cream into the chocolate mixture until no streaks remain. Refrigerate until set.

Assembling the Cake

    Prepare the Cakes

    Once the cakes are completely cool, place one layer on a serving plate.

    Add Mousse and Raspberries

    Spread half of the chocolate mousse over the first cake layer, then top with half of the fresh raspberries.

    Add Second Layer

    Place the second cake layer on top and repeat the process with the remaining mousse and raspberries.

    Finish the Cake

    Use any remaining mousse to frost the top and sides of the cake. Sprinkle with powdered sugar and dark chocolate shavings before serving.
