Method

Cake Directions

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

In a separate bowl, whisk together the eggs, whole milk, vegetable oil, and vanilla extract until well combined.

  4. 4

    Combine Mixtures

Gradually add the wet mixture to the dry ingredients, mixing until just combined. Slowly stir in the boiling water until smooth.

  5. 5

    Bake the Cake

Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cakes

Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Raspberry Sauce Directions

  1. 7

    Prepare the Sauce

In a saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens, about 10 minutes.

  2. 8

    Cool the Sauce

Remove from heat and let the raspberry sauce cool to room temperature.

Chocolate Ganache Directions

  1. 9

    Heat the Cream

In a small saucepan, heat the heavy cream over medium heat until it just begins to boil.

  2. 10

    Melt the Chocolate

Place the semi-sweet chocolate chips in a bowl. Pour the hot cream over the chocolate and let it sit for 5 minutes.

  3. 11

    Stir Until Smooth

Stir the mixture until the chocolate is completely melted and the ganache is smooth.

Assembling Directions

  1. 12

    Layer the Cakes

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of raspberry sauce on top.

  2. 13

    Add Second Layer

Place the second cake layer on top and pour the chocolate ganache over the entire cake, letting it drip down the sides.

  3. 14

    Garnish

Top the cake with fresh raspberries and mint leaves for garnish.
