Prepare the Pork
In a large bowl, combine the pork shoulder with olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper. Make sure the pork is evenly coated with the marinade. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for best results.

Cook the Pork
Preheat the oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover with foil. Roast in the oven for about 3-4 hours or until the pork is tender and easily shredded with a fork. Once done, remove from the oven and let it cool slightly before shredding the meat.

Prepare the Plantains
Peel the plantains and cut them diagonally into 1-inch thick slices.

Fry the Plantains
In a large skillet, heat vegetable oil over medium heat. Once hot, add the plantain slices in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels, then sprinkle with salt.
