Preparing the Steak

    Marinate the Steak

    In a bowl, mix olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the flank steak and let it marinate for at least 30 minutes.

    Cook the Steak

    Preheat your grill or skillet over medium-high heat. Cook the marinated flank steak for about 5-7 minutes per side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for 10 minutes before slicing.

Caramelizing Onions and Mushrooms

    Sauté the Onions

    In a skillet, melt butter over medium heat. Slice the onion and add it to the skillet. Cook for about 10 minutes, stirring occasionally until the onion is soft and caramelized.

    Add the Mushrooms

    Slice the mushrooms and add them to the skillet with the caramelized onions. Season with salt and black pepper. Cook for an additional 5-7 minutes until the mushrooms are tender and browned.

Making the Pan Coca

    Prepare the Dough

    In a mixing bowl, combine flour, warm water, yeast, and salt. Knead until a smooth dough forms. Cover the bowl with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pan Coca

    Preheat your oven to 400°F (200°C). Once the dough has risen, punch it down and roll it out into a rectangular shape. Place it on a baking sheet lined with parchment paper. Brush the top with olive oil.

    Bake the Pan Coca

    Bake in the preheated oven for about 15-20 minutes or until golden brown. Remove from the oven and let it cool slightly.

Assembling the Bocadillo

    Slice the Steak

    Thinly slice the rested flank steak against the grain.

    Assemble the Sandwich

    On the baked pan coca, layer the sliced steak, followed by the caramelized onions and mushrooms. Fold the pan coca over to create a sandwich.

    Cut the bocadillo into manageable pieces and serve warm.
