    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

    Add Milk and Ingredients

    Stir in the whole milk, 3 tablespoons of sugar, cinnamon stick, vanilla extract, and a pinch of salt into the cooked rice. Cook over medium heat, stirring occasionally, until the mixture thickens and becomes creamy (about 20-25 minutes).

    Remove from Heat

    Once thickened, remove the saucepan from heat. Discard the cinnamon stick and let the pudding cool slightly.

Caramel Topping

    Prepare the Caramel

    In a small saucepan, combine 1 cup of sugar and 2 tablespoons of water. Place over medium heat and stir until the sugar dissolves.

    Cook the Caramel

    Allow the mixture to boil without stirring until it turns a golden amber color, about 5-7 minutes. Remove from heat immediately to prevent burning.

    Drizzle over Pudding

    Carefully pour the caramel over the cooled rice pudding. Let it sit for a few minutes to set before serving.
