Prepare the Garlic
Peel the garlic cloves and use a garlic press or finely mince them with a knife until you have a smooth paste.

Combine Ingredients
In a medium bowl, whisk together the minced garlic, egg yolk, Dijon mustard, and lemon juice until well combined.

Add Olive Oil Slowly
While whisking constantly, slowly drizzle in the olive oil. Start with just a few drops at a time, gradually increasing to a thin stream as the mixture begins to thicken and emulsify.

Season to Taste
Once all the olive oil is incorporated and the aioli is thick and creamy, stir in the salt and black pepper. Adjust seasoning to taste.

If desired, fold in chopped fresh herbs and smoked paprika for added flavor.
