Citrus Syrup

Make the syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir gently until the sugar fully dissolves and the mixture comes to a low simmer.

Remove the pan from heat. Stir in 1/4 cup fresh orange juice, 2 tablespoons fresh lemon juice, and 1 tablespoon fresh lime juice. Let the syrup cool in the pan for 10 minutes so flavors meld.

Taste the syrup. If you prefer it sweeter, dissolve up to 2 teaspoons honey into the warm syrup. If the syrup tastes slightly flat, add a pinch (1/4 tsp) kosher salt to brighten flavors.

Strain the syrup through a fine-mesh sieve into a heatproof container to remove zest pieces. Cover and chill in the refrigerator at least 30 minutes before using. Syrup will keep up to 1 week refrigerated.

While the syrup chills, thinly slice 1/2 an orange, 1/2 a lemon, and 1/2 a lime crosswise. Remove any seeds from slices. Reserve a few slices for garnish and cut remaining slices into halves or quarters for easier serving.

Lightly bruise mint sprigs by clapping them between your hands or gently muddling in a spoon to release aroma; set aside for garnish.

Fill four serving glasses with ice (about 1 cup each). Add about 1 tablespoon of chilled citrus syrup to each glass (adjust to taste; 1–2 tbs for sweeter).

Add 1/4 cup sparkling water to each glass, then top with additional sparkling water to fill (about 1 cup total per glass). Stir gently to combine syrup and soda.

Serve immediately chilled. Leftover syrup can be used in cocktails, iced tea, or lemonade.
