    Peel the garlic cloves and finely mince or grate them until almost paste-like. If using ginger, peel and grate it finely. This releases maximum aroma and allows the flavor to infuse quickly into the liquid.

    In a small saucepan, combine the granulated sugar and 1 tablespoon water. Warm over low heat, stirring, until the sugar dissolves completely (about 1–2 minutes). Do not boil; you only need to dissolve the sugar so the marinade won’t be gritty.

    Combine liquids

    Add the low-sodium soy sauce and mirin to the saucepan with the dissolved sugar. Stir to combine and bring the mixture just to a gentle simmer over medium-low heat (about 2–3 minutes). This helps meld flavors and slightly reduce the alcohol in the mirin.

    Add aromatics

    Remove the pan from heat and stir in the minced garlic and grated ginger. Add the rice vinegar if using; it brightens the mixture and balances sweetness. Let the marinade cool to room temperature (10–15 minutes) so the garlic infuses without being cooked to a sharp bite.

    Finish and cool

    Once cooled, stir in the sesame oil if using. Transfer the garlic soy mirin into a clean jar or bottle, including the garlic pieces. Seal and refrigerate for at least 4 hours, preferably overnight, to allow full flavor development. The mixture will keep in the refrigerator for up to 2 weeks.

    Strain or use with solids

    If you prefer a smoother sauce, strain out the solids through a fine-mesh sieve or cheesecloth and reserve the liquid. Alternatively, use as-is so the minced garlic remains in the sauce for extra punch. If you strained and want to use the garlic, spoon it over grilled meats or vegetables as a condiment.

    When ready to use, shake or stir the jar. Drizzle the garlic soy mirin over grilled fish, chicken, tofu, or steamed vegetables. Sprinkle toasted sesame seeds and thinly sliced scallion before serving if desired.
