Prepare the Potatoes

Peel the potatoes and slice them thinly (about 1/8 inch thick) using a sharp knife or a mandoline.

Soak the Potatoes

Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes. This will help remove excess starch and make them crispier when fried.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels. Carefully add a handful of potatoes to the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes.

Drain and Season

Using a slotted spoon, remove the fried potatoes from the oil and drain them on paper towels. While they are still hot, toss them in a bowl with lemon zest, sea salt, and paprika to taste.

Transfer the seasoned batatas fritas to a serving platter and enjoy immediately.
