Citrus base

Ice & dilution

Method

Prep & rim

  1. 1

    Prepare salt (or salt/sugar) rim

Pour the coarse salt (and sugar if using) onto a small shallow plate and mix. Run a lime wedge around the outer rim of 4 cocktail glasses to moisten. Dip rims lightly into the salt mixture, turning to coat evenly. Set glasses aside to dry slightly while you mix the margarita base.

  2. 2

If you prefer no rim, skip this step and proceed to chilling glasses in the freezer for 5–10 minutes for extra cold drinks.

Make the citrus base

  1. 3

    Juice the citrus

Juice limes, lemons and oranges until you have the required quantities (1 cup lime, 1/4 cup lemon, 1/4 cup orange). Strain the juices through a fine mesh sieve into a measuring cup or bowl to remove pulp and seeds for a cleaner cocktail (optional).

  2. 4

    Combine juices and sweetener

In a pitcher or large mixing glass, add the fresh lime juice, lemon juice and orange juice. Stir in the agave syrup until fully incorporated. Taste and adjust sweetness with the optional 1:1 simple syrup if desired—add by tablespoon increments until balanced. If you want a subtle floral/orange aroma, stir in the orange blossom water or 1/2 tsp non-alcoholic orange bitters and mix well.

Assemble & chill

  1. 5

    Dilute and chill

Add 4 cups of ice into the pitcher with the citrus-sweetener mix and stir vigorously for 20–30 seconds to chill and slightly dilute the mixture. This step replicates the mouthfeel of a classic margarita by tempering acidity. Alternatively, if making single servings, fill a cocktail shaker with ice, add about 1/2 to 2/3 cup of the citrus base, shake 10–12 seconds and strain into prepared glass over fresh ice.

  2. 6

    Add bubbles

After chilling/diluting, top the pitcher with 1 cup of cold sparkling water or club soda to add brightness and gentle effervescence. Stir gently to incorporate without losing too much fizz.

Serve & garnish

  1. 7

Fill each rimmed glass with fresh ice. Pour the virgin margarita into glasses, distributing evenly.

  2. 8

Garnish each glass with a lime wedge on the rim and an orange wheel floated on top. Optionally, add a thin lime wheel inside the glass for extra visual appeal.

  3. 9

Serve immediately. Provide straws or cocktail stirrers if desired.
