Measure and combine
In a mixing glass or shaker without ice, add 2 oz Ilegal mezcal, 0.5 oz Amaro (Amore substitute), and 0.25 oz simple syrup.

Add bitters
Add 2 dashes of Angostura bitters and 2 dashes of mole bitters to the mixing glass.

Stir with ice
Fill the mixing glass with plenty of ice (enough to chill and dilute slightly). Stir gently for 20–30 seconds (about 15–20 full strokes) until the mixture is well chilled and slightly diluted.

Prepare serving glass
Discard the ice/water from the chilled Old Fashioned glass and add a large ice cube.

Strain
Double-strain the cocktail from the mixing glass into the prepared serving glass over the large ice cube using a Hawthorne and fine strainer (or just a Hawthorne if needed) to catch any small bits.

Serve
Serve immediately. Optionally provide a small stirrer so the drinker can re-integrate as the ice melts.
