Tortilla Bowls

Preheat and prepare
Preheat the oven to 375°F (190°C). Place 4 oven-safe bowls or a muffin tin upside down on a rimmed baking sheet so tortillas can drape over them; alternatively use an inverted oven-safe bowl for each tortilla.

Warm each flour tortilla for 15–20 seconds in the microwave or in a dry skillet to make them pliable so they won't crack when molded.

Bake for 12–15 minutes, rotating halfway, until golden brown and crisp. Remove from oven and let cool on the molds for 5 minutes, then transfer to a wire rack to cool completely while they firm up.
Protein (choose chicken or beef)

Chicken option — shred
If using chicken breasts: pat them dry and season both sides with 0.5 tsp salt, 0.125 tsp pepper, 0.5 tsp chili powder and 0.5 tsp cumin. Heat 1 tbs olive oil in a skillet over medium heat. Add chicken and sear 3–4 minutes per side until golden. Add 1/4 cup water or chicken broth, reduce heat to low, cover and simmer 10–12 minutes until internal temperature reaches 165°F (74°C). Remove chicken, let rest 5 minutes, then shred with two forks. Toss shredded chicken with remaining 0.5 tsp chili powder, 0.5 tsp cumin, 1/2 tsp garlic powder and 1/2 tsp onion powder; adjust salt to taste.

Beef option — ground beef
If using ground beef: heat skillet over medium-high and add 1 tbs olive oil. Add beef and cook, breaking up with a spoon, until no longer pink, about 6–8 minutes. Drain excess fat if needed. Stir in chili powder, cumin, garlic powder, onion powder, 3/4 tsp salt and 1/4 tsp pepper. Add 1/4 cup water or broth and simmer 2–3 minutes until flavors meld and mixture is slightly saucy. Taste and adjust seasoning.
Beans & Cheese

Warm the black beans in a small saucepan over low heat for 3–4 minutes until heated through; stir occasionally. Season with a pinch of salt and 1/4 tsp cumin if desired.

Grate or crumble the cheddar and crumble the queso fresco. Keep cheeses covered and refrigerated until assembly to prevent drying.

Chop the romaine and dry it thoroughly in a salad spinner or with paper towels. Place in a bowl and toss lightly just before assembling so it stays crisp.

If you made pico de gallo, taste and adjust with a squeeze of lime and a pinch of salt. Prepare guacamole (or use store-bought) and keep sour cream chilled.

Arrange assembly components so each element is ready: tortilla bowls, shredded chicken or seasoned beef, warm beans, shredded cheddar, crumbled queso fresco, lettuce, pico, sour cream, guacamole, cilantro, tortilla strips and optional jalapeños.

Add 1/2 to 3/4 cup of shredded chicken or seasoned ground beef on top of the beans.

Sprinkle about 1/4 cup shredded cheddar over the warm protein so it softens slightly. Add a generous handful (about 1.5 cups) of chopped romaine lettuce around and over the protein.

Top with 1/4 cup pico de gallo, 2 tbs sour cream, and 2 tbs guacamole per bowl. Crumble about 2 tbs queso fresco over each salad and scatter tortilla strips or crushed chips for crunch.

Storage & Reheating

Store leftover components separately (protein, beans, lettuce, pico, cheeses, guacamole, sour cream, tortilla bowls) in airtight containers. Refrigerate for 2–3 days (guacamole best used within 24 hours). Reheat beans and protein in microwave or skillet until warm. Do not reheat lettuce or fresh toppings. Assemble just before serving.
