Cocktail Base

Fruit & Ice

Garnish (optional)

Method

Prep

  1. 1

    Prepare fruit and tools

Hull and roughly quarter the strawberries so they blend easily. Chill a coupe or cocktail glass in the freezer for 5–10 minutes while you prepare the drink. Measure rum, lime juice, and simple syrup.

  2. 2

If using frozen strawberries instead of fresh, reduce ice to 0.5 cups and add 4–5 frozen berries; otherwise use fresh and the full ice quantity.

Blend

  1. 3

    Combine and blend

In a blender add the hulled strawberries, white rum, fresh lime juice, simple syrup, and ice. Start blending on low for 5–10 seconds to break fruit down, then increase to high and blend for 15–25 seconds until the mixture is smooth and slightly slushy. Total blending time will vary with blender power — stop when texture is pourable but thick.

  2. 4

    Taste and adjust

Taste a small spoonful. If too tart, add 0.25 oz more simple syrup and blend 5 seconds. If too weak, add 0.25 oz more rum and blend briefly. If too thick, add 0.5 oz cold water and pulse once.

Serve

  1. 5

Remove the chilled glass from the freezer. Pour the blended daiquiri through a fine mesh strainer into the glass to remove seeds and ice shards for a smoother mouthfeel (optional).

  2. 6

Garnish with a strawberry or lime wheel on the rim and a mint sprig. Serve immediately with a short cocktail straw.
