Prepare and salt cucumber
Wash the cucumber and trim the ends. If the cucumber is waxed or thick-skinned, peel a 1/2 strip out of every 1 inch to reduce bitterness (optional). Slice the cucumber into 1/4-inch rounds or half-moons if cucumber is large. Place the slices in a colander set over a bowl, sprinkle with 1 tsp kosher salt, toss gently, and let sit for 10 minutes to draw out excess water. After 10 minutes, press or gently squeeze the cucumber to remove additional moisture and pat dry with paper towels.

Make the dressing
Mince the garlic finely (or grate on a microplane). In a small bowl, combine 2 tablespoons rice vinegar, 1 teaspoon granulated sugar, 1 teaspoon light soy sauce, 1 teaspoon sesame oil, 1 teaspoon chili garlic sauce (adjust more or less to taste), 1 teaspoon fresh lime juice, 1/4 teaspoon freshly ground black pepper, and the minced garlic. Whisk until sugar dissolves and the dressing is uniform.

Optional quick temper of aromatics
For a slightly toasted aroma and to mellow raw garlic, heat 1 teaspoon neutral oil in a small skillet over medium heat until shimmering. Remove from heat and immediately pour the hot oil over the minced garlic and sliced scallions in the dressing bowl. This will slightly cook the garlic and release flavor. If you prefer raw brightness, skip heating the oil and add scallions and garlic directly to the dressing cold.

Assemble salad
Add the drained cucumber slices to a mixing bowl. Pour the dressing over the cucumbers and toss gently to coat every piece. Taste and adjust: add more chili sauce for heat, more vinegar for tang, or a pinch more sugar if too sharp. If the salad seems watery, drain briefly again.

Finish and serve
Transfer the dressed cucumbers to a serving dish. Sprinkle 1 teaspoon toasted sesame seeds and 1 tablespoon chopped fresh cilantro (if using) over the top. Serve immediately for crisp texture, or refrigerate for 15–30 minutes to let flavors meld. Keeps well in a covered container for up to 24 hours but will soften over time.
