    In a small bowl, combine smoked paprika, brown sugar, kosher salt, black pepper, ground cumin, onion powder, garlic powder, and cayenne. Whisk thoroughly so the sugar is evenly distributed and there are no lumps of spices.

    Taste a tiny pinch to check balance (optional): the mix should be smoky-sweet with a gentle heat. Adjust salt or cayenne to your preference.

    Pat the chicken thighs dry with paper towels. Dry skin ensures better browning and a crisper finish.

    Rub 2 tablespoons olive oil evenly over the chicken thighs, then sprinkle the smoky spice rub generously over both sides of each thigh, pressing the rub into the skin and under the skin where possible for maximum flavor.

    Rest

    Place the seasoned thighs on a plate or tray and let them rest at room temperature for 20–30 minutes, or refrigerate covered for up to 4 hours. Resting helps the flavors penetrate and lets the chicken come closer to room temperature for even cooking.

Smoky Pan Sauce (optional)

    While the chicken rests, place the skillet back on medium heat. Add the butter and let it melt, scraping up any browned bits (fond) from the bottom of the pan with a wooden spoon.
