Cocktail Base

Method

Cocktail Base

  1. 1

    Prepare glass (optional)

If you want a salted or tajín rim, rub a lime wedge around the rim of a small coupe or rocks glass, then dip the rim into a shallow plate with coarse salt or tajín. Set glass aside.

  2. 2

Add the jalapeño slices and cilantro leaves (if using) to a cocktail shaker. Muddle gently 6–8 times—just enough to release oils and aroma without pulverizing the pepper (this controls heat).

  3. 3

Pour fresh pineapple juice, silver rum, fresh lime juice, and agave syrup into the shaker with the muddled jalapeño.

Mix & Chill

  1. 4

Fill the shaker with ice (about 3/4 full). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled.

  2. 5

Strain the mixture through a fine mesh strainer (or double strain through the shaker's built-in strainer and a small sieve) into the prepared glass over fresh ice if serving on the rocks, or neat in a chilled coupe.

Finish & Serve

  1. 6

If you like a lighter, slightly effervescent drink, top with 1 oz club soda and gently stir once to combine.

  2. 7

Garnish with a pineapple wedge and a thin jalapeño wheel on the rim or floated on top. Serve immediately.
