Frozen Pineapple Cup

    Prepare pineapple

    Choose a firm ripe pineapple (12–16 oz pineapple flesh). Using a sharp knife, slice off the top (about 1–1.5 inches) and reserve top as a lid. Carefully cut around the interior leaving a 1/2-inch shell, scoop out the flesh and reserve fruit. Pat the inside cavity dry with a paper towel.

    Freeze pineapple shell

    Place the hollowed pineapple shell and its lid on a baking sheet and freeze upright for at least 1 hour (longer if you want a colder shell). Freezing helps the shell hold crushed ice and keep the cocktail cold without quickly diluting.

Piña Colada Mix

    Chop reserved pineapple flesh

    Roughly chop the reserved pineapple flesh into chunks. You should have about 1 to 1 1/2 cups chopped pineapple. If you have extra, freeze a few pieces to help thicken the drink.

    Blend the mix

    In a blender combine chopped pineapple, light rum (3 oz), dark rum (1 oz), cream of coconut (3 oz), pineapple juice (4 oz), fresh lime juice (0.5 oz), simple syrup (0.5 oz, optional) and 2 cups crushed ice. Blend on high until smooth and slushy, 30–45 seconds. Taste and adjust sweetness or rum level to preference. The mixture should be thick enough to mound but still pourable.

    Chill

    If the frozen pineapple shell is not very cold, return it to the freezer while you blend so the served drink stays cold longer.

Assembly & Garnish

    Fill pineapple

    Remove the frozen pineapple shell from the freezer. Spoon or gently pour the blended Piña Colada mix into the frozen pineapple until nearly full, leaving room for the 151-proof rum floater and garnish. Pack lightly if needed so it holds shape.

    Add 151-proof rum floater

    Carefully pour 1/2 oz (about 15 ml) of 151-proof rum over the top of the cocktail. For a more dramatic presentation, float it by pouring slowly over the back of a spoon so it sits on top of the slush.

    Garnish and serve

    Skewer a pineapple wedge and maraschino cherry on a pick and place on the rim or on top. Sprinkle toasted coconut flakes over the surface if desired. Insert a paper straw. Serve immediately with the reserved pineapple lid alongside as a decorative cover if you like.

    Safety note

    151-proof rum is very flammable. Do not light or set on fire. Advise guests about the overproof rum floater and consume responsibly.
