    Prepare blender

    Add 1.5 cups of ice to a blender. Use crushed or cubed ice — crushed will give a thicker, slushier texture.

    Add liquids and fruit

    Pour 2 oz light rum, 1.5 oz cream of coconut, 4 oz pineapple juice, 0.5 oz fresh lime juice, and 1 cup fresh pineapple chunks into the blender with the ice. If you prefer sweeter, add 0.25 oz simple syrup.

    Blend to texture

    Secure lid and blend on high for 15–30 seconds, pulsing if needed, until smooth and slushy. Stop and taste a small spoonful; if too thick, add 0.5 oz pineapple juice and blend briefly. If too thin, add a few more ice cubes and pulse until desired consistency is reached.

    Optional rum float

    If using the optional dark rum float, pour 0.5 oz dark or aged rum gently over the back of a spoon onto the top of the drink after pouring into the glass so it forms a darker layer.

Garnish

    Pour the blended Piña Colada into a chilled hurricane or Collins glass, leaving a little headspace for garnish.

    Skewer a maraschino cherry and a pineapple wedge and rest it on the rim. Lightly dust the top with a pinch (about 1/8 tsp) of grated nutmeg or toasted coconut if desired.

    Serve immediately with a straw and enjoy.
