    Prepare glass and mint

    Place 8–10 fresh mint leaves in a sturdy highball or Collins glass. Reserve two small leaves for garnish. If adding a flavor (charge +$2), prepare that ingredient now (e.g., 3–4 raspberries, 1/2 lime slice, or 0.5 oz flavored syrup).

    Muddle

    Add the fresh lime juice and simple syrup to the glass with the mint leaves (and any fresh fruit for flavor). Using a muddler, gently press and twist 6–8 times — just enough to release the mint’s oils and macerate any fruit, but do not shred the mint (over-muddling makes it bitter).

    Add rum and ice

    Pour 2 oz Bacardi white rum into the glass. Fill the glass about three-quarters full with crushed ice (approximately 1 cup).

    Stir and top

    Using a bar spoon, briefly stir (6–8 rotations) to mix the rum, lime, syrup, and mint evenly through the ice. Top with ~2 oz soda water, then gently stir once more to integrate without flattening the bubbles.

    Garnish and serve

    Add a lime wedge or wheel on the rim and a fresh mint sprig. Clap the mint sprig lightly between your palms to bloom the aroma before placing it in the glass. Serve with a short straw. Note: If a flavor add-on was chosen (e.g., muddled fruit), adjust simple syrup to taste—use slightly less syrup when fruit adds sweetness.
