Mango Sorbet Base

Make simple syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 1 minute, then remove from heat and let cool to room temperature.

Blend mangoes
Reserve 1/2 cup of the peeled chopped mangoes for garnish if desired. Place remaining chopped mangoes in a blender. Add cooled simple syrup (use all or adjust sweetness to taste), 2 tablespoons fresh lime juice, and 1 teaspoon salt. Blend until completely smooth, about 45–60 seconds. Taste and adjust lime or sugar as needed.

Chill and freeze
If you have an ice cream maker: chill the puree in the refrigerator 30 minutes. Churn according to manufacturer directions until soft-sorbet texture, about 20–25 minutes. If you don't have an ice cream maker: pour the puree into a shallow metal pan and freeze for 45 minutes, then vigorously stir or scrape with a fork to break ice crystals. Repeat every 30–45 minutes 3–4 times until a smooth sorbet forms.
Chamoy & Tajín Layer

Prepare the glass by spooning 1 to 1.5 tablespoons of chamoy around the inside rim and down the sides (you can drizzle more for stronger flavor). Lightly sprinkle 1/2 to 1 teaspoon Tajín inside the rim or over the chamoy so it adheres. Keep remaining chamoy and Tajín to drizzle between layers during assembly.

If your tamarind paste is thick, warm it briefly with 2 tablespoons simple syrup in a small saucepan over low heat, stirring until it loosens into a pourable sauce. Remove from heat and let cool slightly. Stir in crushed chile powder or an extra pinch of Tajín if you want it spicier.
Assembly & Garnish

Prepare serving glasses (12–16 oz each). Drizzle additional chamoy inside each glass and sprinkle a pinch of Tajín so the chamoy streaks are visible from the outside.

Optional finishing touch: squeeze a wedge of lime over the top just before serving for a bright pop of acidity.
