Queso (Cheese) Dip

Prep cheeses
Grate the sharp cheddar and Monterey Jack and toss together so they melt evenly.

Add dairy
Slowly whisk in the whole milk and half-and-half in a steady stream to avoid lumps. Continue whisking and bring the mixture to a gentle simmer until it thickens and coats the back of a spoon, about 3–4 minutes.

Melt cheese
Lower the heat to low. Add the grated cheeses in small handfuls, stirring or whisking to fully melt before adding more. Keep the heat low to prevent the cheese from breaking (grainy texture).

Season and finish
Stir in the diced green chiles, ground cumin, smoked paprika, kosher salt, and black pepper. Taste and adjust seasoning. If the queso is too thick, stir in up to 2 tablespoons more milk. Keep warm over the lowest heat or transfer to a small slow cooker on warm.

Garnish
Transfer queso to a serving bowl and sprinkle with chopped cilantro. Serve with lime wedges on the side for those who want a bright squeeze.
Guacamole

Halve the avocados, remove pits, and scoop flesh into a medium bowl. Mash with a fork to your preferred texture (chunky or smooth).

Add the finely diced red onion, chopped cilantro, diced jalapeño, lime juice, ground cumin, kosher salt, and black pepper. Fold in the optional diced tomato if using. Taste and adjust salt or lime as needed.

For best texture and flavor, let the guacamole rest 10 minutes at room temperature before serving so flavors meld. Keep covered with plastic wrap pressed directly on the surface if making ahead to minimize browning; serve within 2 hours for best color.
Pico de Gallo

Combine the diced tomatoes, diced onion, chopped cilantro, and diced jalapeño in a bowl.

Add the lime juice, kosher salt, and black pepper. Stir to combine. Taste and adjust seasoning—add more lime or salt as desired.

Let the pico rest 10–15 minutes at room temperature for flavors to meld. Drain any excess liquid before serving if tomatoes are very juicy, or serve with a slotted spoon.
To Serve

Arrange bowls of queso, guacamole, and pico de gallo on a platter with tortilla chips alongside. Provide small spoons or spreaders for each dip. Garnish with extra cilantro leaves and lime wedges.
