Fruit

Method

Fruit

1

Prepare fruit

Wash all fruit thoroughly. Hull and quarter the strawberries. Dice the pineapple into roughly 1/2-inch pieces. If using large grapes, halve them. Ball or dice the melon into similar-sized pieces. Peel and slice the kiwi into rounds or half-moons. Measure blueberries and add whole.

2

Combine the prepared strawberries, pineapple, blueberries, grapes, melon, and kiwi in a large mixing bowl. Gently toss to mix, taking care not to crush softer fruit like berries.

Dressing & Finish

3

Make dressing

In a small bowl or measuring cup, whisk together the fresh lime juice, honey (or maple syrup), chopped mint, orange zest (if using), a pinch of salt, and a pinch of black pepper (if using) until the honey dissolves and the dressing is slightly emulsified.

4

Pour the dressing over the fruit in the large bowl. Using a large spoon, gently fold the dressing into the fruit until evenly coated. Taste and adjust: add another 1/2 teaspoon honey if you prefer sweeter, or a little more lime for brightness.

5

Let the fruit cup rest in the refrigerator for 10–15 minutes to allow flavors to marry (optional). Give a final gentle toss before serving.

6

Portion into individual cups or bowls. Garnish each serving with a small sprig of mint, if desired.
