Form Patties

Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 inch thick and slightly wider than the bun. Avoid overworking the meat to keep patties tender.

Season both sides of each patty evenly with kosher salt and freshly ground black pepper just before cooking.

Cook Patties

Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil and swirl. When shimmering, add the patties and cook without pressing for 3-4 minutes on the first side until a brown crust forms. Flip and cook another 2-3 minutes for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of white cheddar on each patty, cover the skillet briefly (or place a small lid) to melt the cheese.

Buns & Toppings

While the patties cook, spread 1 teaspoon butter on the cut face of each bun half. Place buns butter-side down in a separate skillet or on the griddle over medium heat and toast until golden, about 1-2 minutes. Remove and keep warm.

Assemble the cheeseburgers: spread ketchup and mustard on the bun bottoms. Place lettuce leaf, tomato slice, and the cheddar-topped beef patty on each bottom bun. Add red onion slices and pickles, then cap with the toasted bun top.

French Fries

Prepare Potatoes

Peel if desired and cut the potatoes into 1/4 to 3/8-inch thick sticks. Rinse the cut fries under cold water until the water runs clear to remove surface starch. Pat thoroughly dry with paper towels or a clean kitchen towel.

Fry Fries

Pour about 2 cups of vegetable oil into a heavy-bottomed skillet or pot to a depth of about 1 inch and heat to 325°F (163°C). Fry the potato sticks in batches for 3-4 minutes until they are softened and pale (not brown). Remove to a paper towel-lined tray. Increase oil temperature to 375°F (190°C). Return fries in batches and fry for 2-3 minutes more until golden and crisp. Drain on paper towels.

Immediately season the hot fries with kosher salt and optional black pepper. Serve alongside the cheeseburgers.
