Muddle orange
Cut one fresh orange into a quarter or one large wedge. In the bottom of a cocktail shaker, add the orange wedge and 0.25 oz simple syrup. Use a muddler to press and twist firmly 6–8 times to release oils and juice without pulverizing the pith (you want fragrant juice and peel oils, not bitterness).
Build & Shake
Add spirits and citrus
Add 2 oz Gray Whale Gin, 0.75 oz Cynar, and 0.75 oz fresh lemon juice to the shaker with the muddled orange.
Add ice and shake
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the shaker is very cold and well-diluted.
Strain & Finish
Double strain
Discard ice from the chilled glass. Using a Hawthorne strainer and, if desired, a fine mesh strainer, double-strain the cocktail into the chilled coupe to remove orange solids and small ice chips.
Garnish & serve
Express an orange peel over the cocktail to release the oils, run the peel around the rim, and drop it in as a twist. Serve immediately.
