Custard Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Heat the Cream

    In a saucepan, combine the heavy cream and the vanilla bean (split open and scraped). Heat over medium heat until it begins to steam but does not boil. Remove from heat and let it sit for about 15 minutes to infuse the flavor.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolk mixture while whisking constantly to prevent the eggs from curdling. Make sure the mixture is well combined.

    Strain the Mixture

    Strain the custard mixture through a fine-mesh sieve into a clean bowl to remove any solids, including the vanilla bean pod.

    Prepare Ramekins

    Place six ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.

    Water Bath

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. This water bath will help to cook the custards evenly.

    Bake

    Carefully transfer the baking dish to the preheated oven and bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

    Cool and Refrigerate

    Remove the ramekins from the water bath and let them cool at room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

Caramelizing Sugar

    Prepare for Caramelization

    Once the custards are chilled, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.

    Caramelize the Sugar

    Using a kitchen torch, carefully caramelize the sugar until it melts and forms a crisp, golden crust. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, keeping a close eye to prevent burning.

    Allow the caramelized sugar to cool and harden for a couple of minutes before serving.
