Prepare the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Cook the Pancetta
In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until it is crispy and golden, about 4-5 minutes. Remove from heat and set aside.

Prepare the Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Add Egg Mixture
Quickly pour the egg mixture over the pasta, tossing rapidly to combine. The heat from the pasta will gently cook the eggs, creating a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.

Season and Serve
Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately with extra Parmesan cheese on the side.
