Directions

  1. 1

    Prepare the Ingredients

Gather all the ingredients and prepare them for cooking. Chop the pancetta into small pieces and grate the Pecorino Romano cheese.

  2. 2

    Cook the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Cook the Pancetta

While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped pancetta and cook until it becomes crispy, about 5-7 minutes.

  4. 4

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of black pepper until well combined.

  5. 5

    Combine Pasta and Pancetta

Once the spaghetti is cooked, reserve about 1 cup of the pasta water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta, tossing to combine.

  6. 6

    Add the Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

  7. 7

    Serve

Taste the pasta and adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with extra Pecorino Romano cheese and black pepper.
