Prepare the Ingredients
Gather all the ingredients and prepare them for cooking. Chop the pancetta into small pieces and grate the Pecorino Romano cheese.

Cook the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Cook the Pancetta
While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped pancetta and cook until it becomes crispy, about 5-7 minutes.

Combine Pasta and Pancetta
Once the spaghetti is cooked, reserve about 1 cup of the pasta water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta, tossing to combine.

Serve
Taste the pasta and adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with extra Pecorino Romano cheese and black pepper.
