For the Roasted Beets

Prepare the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly to remove any dirt.

Season and Roast
Wrap each beet in aluminum foil after drizzling with olive oil, salt, and pepper. Place them on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork.

Cool and Peel
Remove the beets from the oven and let them cool. Once cool enough to handle, peel off the skins using your hands or a paper towel.

Slice
Once peeled, slice the beets into wedges or rounds as desired.
For the Fried Goat Cheese

Prepare the Goat Cheese
Slice the goat cheese into rounds about 1/2 inch thick.

Dredge in Flour
Coat each round of goat cheese in flour, shaking off the excess.

Coat with Breadcrumbs
Roll the egg-coated cheese in breadcrumbs until fully coated.

Fry the Cheese
In a skillet, heat vegetable oil over medium heat. Fry the cheese for 2-3 minutes on each side, until golden brown. Drain on paper towels.

Prepare the Dressing
In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper to taste.

Toss the Greens
In a large bowl, add mixed field greens and drizzle with the prepared dressing. Toss gently to combine.
