Method

Pork Shank

    Prepare the Pork Shank

    Preheat your oven to 300°F (150°C). Season the pork shank generously with salt and black pepper.

    Sear the Pork

    In a large oven-safe pot, heat olive oil over medium-high heat. Add the pork shank and sear on all sides until golden brown, about 5-7 minutes.

    Add Aromatics

    Add minced garlic and chopped onion to the pot, cooking until fragrant, about 2 minutes.

    Add the Broth and Rosemary

    Pour in the chicken broth and add chopped rosemary. Bring to a simmer.

    Braise the Pork

    Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, until the pork is tender and falling off the bone.

Broccolini

    Prepare the Broccolini

    While the pork is braising, wash the broccolini under cold water and trim the ends.

    Sauté the Broccolini

    In a skillet, heat olive oil over medium heat. Add the broccolini, salt, and garlic powder. Sauté for about 5-7 minutes until tender but still bright green.

Peach Chutney

    Combine Ingredients for Chutney

    In a saucepan, combine diced peaches, chopped onion, brown sugar, apple cider vinegar, grated ginger, cinnamon, and salt.

    Cook the Chutney

    Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for 20-25 minutes until the peaches are soft and the mixture thickens. Stir occasionally.

Rosemary Cherry Demi

    Prepare the Demi

    In a small saucepan, combine cherry preserves, red wine, chopped rosemary, and beef broth.

    Reduce the Sauce

    Simmer over medium heat for about 15-20 minutes, until the sauce has thickened slightly.
