Dough Preparation

Activate Yeast
In a small bowl, combine warm water (1.5 cups), sugar (1 tsp), and active dry yeast (2 tsp). Stir gently and let it sit for about 5-10 minutes, until foamy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Mix well.

Make Dough
Add the yeast mixture and olive oil (2 tbs) to the dry ingredients. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours, until doubled in size.

Add Tomatoes and Seasoning
Add canned crushed tomatoes (28 oz), dried oregano (1 tsp), salt (0.5 tsp), and black pepper (0.5 tsp) to the saucepan. Simmer for 15-20 minutes until thickened.

Finish Sauce
Stir in fresh basil (0.25 cups) and remove from heat. Let it cool slightly before using it on the pizza.

Preheat Oven
Preheat your wood-fired pizza oven to about 500°F (260°C).

Shape Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Bake Pizza
Carefully transfer the pizza to the hot pizza oven and bake for about 8-12 minutes or until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven, let it cool for a minute, slice, and serve hot.
