Method

Steak Preparation

  1. 1

    Season the Steak

Generously season the New York Strip Steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

  2. 2

    Cook the Steak

Preheat a grill or skillet over high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 10 minutes.

Asparagus Preparation

  1. 3

    Prepare the Asparagus

Trim the woody ends off the asparagus and rinse them under cold water.

  2. 4

    Cook the Asparagus

In a skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute. Add the asparagus, salt, and black pepper, sauté for about 5-7 minutes until tender but still crisp.

Demi-Glace Preparation

  1. 5

    Make the Demi-Glace

In a saucepan, combine beef stock, red wine, shallots, thyme, and the bay leaf. Bring to a boil, then reduce heat and let simmer for about 30-40 minutes until reduced by half. Strain and keep warm.

Herb Butter Preparation

  1. 6

    Prepare the Herb Butter

In a small bowl, combine softened butter, chopped parsley, thyme, and minced garlic. Mix well and shape into a log, wrap in plastic wrap, and refrigerate until firm.

Serving

  1. 7

    Plate the Dish

Slice the steak and place it on a plate alongside the sautéed asparagus. Drizzle the demi-glace over the steak and top with a slice of herb butter. Serve immediately.
