Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Bake the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let cool.
Cheesecake Filling

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, sour cream, lemon juice, lemon zest, and vanilla extract, mixing until fully combined.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just incorporated. Be careful not to overmix.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the Cheesecake
Remove from oven and refrigerate for at least 4 hours, preferably overnight.
Blueberry Compote

Cook the Compote
In a saucepan over medium heat, combine the fresh blueberries, granulated sugar, lemon juice, cornstarch, and water. Stir gently to combine.

Simmer
Bring to a gentle simmer and cook for about 5-7 minutes until the blueberries have burst and the mixture has thickened slightly. Remove from heat and let cool.
Creme Anglaise

Prepare the Cream
In a saucepan, heat the heavy cream and vanilla bean (or extract) over medium heat until just below boiling.

Whisk the Egg Yolks
In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and thick.

Cool the Sauce
Strain the sauce through a fine mesh sieve into a bowl to remove any lumps. Let cool before serving.
