For the Fried Tiger Shrimp

    Prepare the Breading Stations

    In three separate shallow bowls, set up your breading stations: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs mixed with salt, black pepper, and cayenne pepper.

    Bread the Shrimp

    Take each tiger shrimp, coat it in the flour, dip it in the beaten eggs, and finally coat it with the panko breadcrumbs. Repeat until all shrimp are breaded.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove the shrimp and place them on a plate lined with paper towels to drain excess oil.

For the Spicy Sambal Aioli

    Mix the Ingredients

    In a small bowl, combine the mayonnaise, sambal oelek, minced garlic, lemon juice, and salt. Stir well until smooth and fully combined.

    Cover the aioli and refrigerate until ready to serve. This allows the flavors to meld.

For the Pineapple

    Prepare the Pineapple

    In a mixing bowl, combine diced fresh pineapple with lime juice, honey, and a pinch of salt. Toss gently to combine.

    Let the pineapple mixture sit for about 10 minutes to enhance the flavors before serving.
