Meat Preparation

Season the Elk Chops
In a small bowl, mix the salt and black pepper. Rub the seasoning mixture all over the cervena elk chops.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the elk chops and sear for 3-4 minutes on each side, until browned. Remove from heat and let rest.

Make the Gastrique
In a small saucepan over medium heat, combine the blackberries, sugar, and red wine vinegar. Cook while stirring until the blackberries break down and the mixture thickens slightly, about 10 minutes. Strain through a fine mesh sieve to remove seeds.
Plating

Serve the Dish
On a plate, arrange the elk chops, drizzle with demi-glace, and serve alongside the sautéed broccolini. Finally, drizzle the blackberry gastrique over the elk chops for a beautiful presentation.
