Method

Preparation of the Bison

    Season the Roast

    Pat the bison chuck roast dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Roast

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Once hot, add the bison roast and sear each side until browned, about 4-5 minutes per side.

    Remove the Roast

    Once seared, remove the roast from the pot and set aside on a plate.

Cooking the Vegetables

    Sauté Pearl Onions

    In the same pot, add the pearl onions and sauté until they begin to caramelize, about 3-4 minutes.

    Add Carrots

    Chop the carrots into large chunks and add them to the pot. Sauté for an additional 5 minutes.

    Return Roast and Add Asparagus

    Place the bison roast back into the pot. Add the asparagus spears around the roast. Cover the pot and reduce the heat to low.

Final Cooking

    Simmer the Roast

    Let the roast simmer on low heat for 3-4 hours, or until the meat is tender and easily shreds with a fork.

    Prepare the Horseradish Creme Fraiche

    In a small bowl, combine the creme fraiche, prepared horseradish, lemon juice, and salt. Mix well until smooth.

Serving

    Serve the Dish

    Once the roast is done, slice it against the grain and serve alongside the sautéed vegetables. Top with a dollop of horseradish creme fraiche.
