Make Crispy Prosciutto

Oven method (recommended)
Preheat the oven to 375°F (190°C). Arrange prosciutto slices on a parchment-lined baking sheet in a single layer. Brush very lightly with olive oil (about 1 tsp spread across slices). Bake 8–12 minutes, watching closely — prosciutto should be crisp and slightly browned but not burnt. Remove and drain on paper towels; once cool, break into bite-sized shards.

Let eggs sit undisturbed for 10–15 seconds so they begin to set at the edges. Using a silicone spatula, gently push the set eggs from the edges toward the center, folding large soft curds over the still-liquid eggs. Keep the heat low and move the spatula in broad strokes, allowing the eggs to cook slowly and remain creamy. Remove the pan from heat when eggs are mostly set but still slightly glossy and custardy — carryover heat will finish them (total cook time about 3–5 minutes). Taste and adjust seasoning if needed.
Dress the Arugula

In a small bowl, toss the baby arugula with the extra-virgin olive oil, lemon juice, and a pinch of flaky sea salt to lightly dress it. This keeps the peppery greens bright and prevents them from wilting under warm eggs.
Assemble & Finish

Scatter the crispy prosciutto shards over the eggs and arugula. Drizzle balsamic glaze sparingly over the prosciutto and greens (about 1/2 tablespoon per plate) and finish with a few pinches of flaky sea salt and an extra crack of black pepper.

If using, sprinkle chopped chives, grated parmesan, and a light dusting of red pepper flakes to taste. Serve immediately with toasted bread or crostini if desired.
