Prepare chicken
Pat the chicken breasts dry. If breasts are thick, butterfly or pound to an even thickness about 1/2-inch. Cut each breast into 2 long strips (so each tortilla gets 2 strips) or into pieces to fit the wrap.
Set up breading station
In one shallow bowl combine flour, cornstarch, 1/2 tsp kosher salt, 1/4 tsp black pepper, and garlic powder. In a second bowl whisk eggs with milk. In a third shallow bowl add panko breadcrumbs.
Bread the chicken
Dredge each chicken piece first in the flour mixture, shaking off excess, then dip into the egg mixture, then press into panko breadcrumbs until well coated. Place on a plate and let rest 5 minutes so coating adheres.
Fry the chicken
Heat a 10–12 inch skillet over medium-high and add vegetable oil to reach about 1/4-inch depth (approximately 1 cup). When oil reaches 350°F (or a small breadcrumb sizzles immediately), add chicken strips in a single layer (do not crowd). Fry 3–4 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a paper towel-lined plate and let rest 2 minutes.
Toss in buffalo sauce
Place the hot fried chicken in a bowl, pour 1/2 cup buffalo sauce over and toss gently to coat each piece evenly. Reserve a tablespoon of sauce if you like extra on top.

Prepare vegetables
While chicken fries or after it rests, slice the tomato into thin wedges or slices. Peel and julienne or grate carrot to measure 1/2 cup. Slice cucumber into thin half-moons to measure 1/2 cup. In a small bowl toss spring mix, tomato slices, carrot, and cucumber with a pinch (about 1/4 tsp) of salt, a tiny pinch of black pepper and a quick squeeze of the 1/4 lemon if using; this brightens flavors.
Assemble the wraps
Lay a warm tortilla flat. Spread about 2 tablespoons of ranch down the center (adjust to taste). Place about 1 cup of dressed spring mix and veggies down the center, leaving 1–1.5 inches at each edge. Top with the buffalo-coated chicken pieces (2 strips per wrap) arranged in a line. Sprinkle about 2 tablespoons (approx. 1/8 cup) bleu cheese crumbles over the chicken. If desired, drizzle a little reserved buffalo sauce on top.
Fold and serve
Fold the bottom edge up over the filling, fold in the sides, and roll tightly to close. If desired, place seam-side down in a warm skillet for 30–60 seconds per side to seal and crisp lightly. Slice each wrap in half on the diagonal and serve immediately with extra ranch or buffalo sauce on the side.
Sauces & Finishing Touches
Taste one half-wrap and adjust: add more ranch for creaminess, more buffalo for heat, or additional bleu cheese for tang. Serve hot so chicken remains crispy.
