    Prepare glass and muddle

    Place the granulated sugar, fresh lime juice and one lime wedge into a sturdy highball or Collins glass. Add the fresh mint leaves on top of the sugar and lime. Using a muddler or the back of a wooden spoon, gently press and twist the mint leaves and lime against the sugar 6–8 times to release oils and juice. Do not over-muddle — you want aroma and flavor without shredding the mint into bits.

    Add rum and ice

    Pour 2 oz of white rum into the glass over the muddled mixture. Fill the glass about three-quarters full with crushed ice (approximately 1 cup). Stir vigorously for about 10–15 seconds to dissolve remaining sugar and chill the drink, bringing the ingredients together.

    Top and finish

    Top the cocktail with about 2 oz (60 ml) sparkling water to taste. Give a gentle final stir to lift the mint through the drink without bruising it further. Add the remaining lime wedge if desired.

    Garnish and serve

    Slap a mint sprig between your palms once to lightly bruise and release aroma, then place it into the glass as garnish. Serve immediately with a straw and an extra spoon for stirring.
