Preparation of Potatoes

    Wash and Cut Potatoes

    Thoroughly wash the russet potatoes under cold running water. Cut each potato in half lengthwise and then cut each half into 1/4 inch thick slices, creating a waffle pattern.

    Soak the Potato Waffles

    Place the cut potato waffle pieces in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and achieve crispiness.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature checking.

    Drain and Dry the Potatoes

    After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

    Fry the Waffle Fries

    Carefully add the dried potato slices in batches to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
