Method
Preparation
- 1
Prepare the Chicken
Pat the boneless chicken breast dry with paper towels. This will help the seasoning adhere better during grilling.
- 2
Marinate the Chicken
In a bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken breast to the bowl and coat it evenly with the marinade. Let it sit for at least 30 minutes (or up to 2 hours in the refrigerator) to enhance the flavor.
Grilling
- 3
Preheat the Grill
Preheat your grill to medium-high heat (about 375-400°F / 190-200°C).
- 4
Grill the Chicken
Place the marinated chicken breast on the grill. Cook for about 6-7 minutes on one side, then flip and cook for another 6-7 minutes, or until the internal temperature reaches 165°F (74°C).
- 5
Add Monterey Style Toppings
In the last 2 minutes of grilling, add the bacon slices on top of the chicken and cover the grill to allow them to crisp up. After 1 minute, add the cheddar cheese on top of the chicken and close the lid again to melt the cheese. Once done, drizzle BBQ sauce over the top before serving.
