Pork Tenderloin Preparation

    Prep the Pork Tenderloin

    Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.

    Dredge the Pork

    Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt, pepper, and garlic powder.

    Bread the Medallions

    Dip each pork medallion first into the flour, then into the egg, and finally coat with breadcrumbs. Repeat until all pieces are breaded.

    Fry the Pork

    In a large skillet, heat oil over medium-high heat. Once hot, fry the breaded pork medallions for 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.

    Slice the tomato and onion into thin rings. Set aside.
